healthy fourth of july snacks

July 2, 2007 at 8:00PM by Mai Hoang |

Romantic Beach Picnic Every year my friends and I have a big picnic in the park. It's a lot of fun, but the food.... Well, the food is not so great. It's illegal to barbecue in the park and none of us can really cook so people usually bring buckets of fried chicken. So it's pretty much a taste-off between KFC and Popeye's! This year, I'm going to be a health-nut and bring some picnic snacks that won't create a grease slick on my face and might actually taste okay. :) Here are some ideas I found on the Web.

-- FRUIT KABOBS: Skewered chunks of watermmelons, honey dew, cantaloupe, grapes, strawberries. Basically, fruit salad on a stick! No need for plates or utensils.

-- DELI ROLLUPS: Sandwiches can get messy. But not if they're rolled up right. One recipe I found suggested rolling up turkey and havarti cheese and argula. But I will probably roll it all up in a soft torilla.

-- CINNAMON CHIPS AND FRUIT SALSA: The name is self-explanatory. You make a chopped up fruit salad and then scoop it up with tortilla chips baked with cinammon.

Got any other ideas for me?

Thanks, CGs!

Mai
